The steamed cheese looks bonerific. Think it's white cheddar? If I'm thinking of the same place you are, which I'm fairly certain I am

That's really the secret of White Castle and Krystal burgers. They're steamed on a bed of onions.

Never heard of steaming one, but I did see a guy I worked with deep-fry a patty. It looked like a heart attack waiting to happen.

Walt. I saw the same show you mention a few months back.

Why not take a bamboo steamer, put the patty on a plate to keep from crudding up your steamer and steam the patty that way.

I have tried it with my bamboo steamer and found you can duplicate the Krystal look, but not the full Krystal taste.

And (IMO) nothing matches grilling or cooking on a flat top.

Flat top, water, cover it the best way to go. you get the best of both "grilling" and steaming.

Pretty sure that's how school cafeterias make their burgers.

The steaming part.. Not the onion part.

I went there a few years back. The patty is about what you'd expect from a steamed burger. Somewhat bland but actually pretty moist. The melted cheese is what makes the package pretty memorable. It's a local institution there and was slammed when I went.

A cooking magazine I subscribe to had a recipe for steamed burgers. Basically, you put a little water in a pot, put a steamer basket over it and then put in hamburger patties, cheese, onions and buns. I kinda want to try this, although I don't have a steamer basket

They do a beer steamed burger at a local joint here in Santa Rosa. It's actually pretty decent. But after learning how to properly do a smash burger at the house...there's no turning back.
