Anybody Have a Recipe for Hoover Sauce, the Other Mississippi State Sauce?

From what I read years ago, it sounds like it is related to Peking Duck with similar ingredients.

I have a bottle at home right now. It’s incredible on duck.

I’ve never tried to recreate, but if I did, I would start with :
Soy
Sugar
Tomato paste
Vinegar
Onion
Garlic
Salt
Cayenne/spice

And cook that down into some motor oily consistency type concoction and go from there.

Can you post a picture of the label showing ingredients?

Instead of the sugar, I bet they use maltose, which is a thick syrup that is used to make Peking Duck marinade.

I actually doubt there's any tomato in it. This is just from my seeing pictures of it.

I suppose tomato can be subjective in the sense of how much and what else is in the ketchup they use.

Lots of corn syrup.

Local grocery stores and gas stations sell it here. If you’re wanting some, you can buy online.

I know nothing about this one. However, The internet has one.

Hoover Sauce (from internet)

Hoover Sauce Ingredients

1 cup ketchup
1/2 cup apple cider vinegar
1/2 cup brown sugar
2 tablespoons Worcestershire sauce
2 tablespoons mustard
1 teaspoon paprika
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon black pepper


Add all of the sauce ingredients to a medium saucepan and stir to incorporate. Bring the contents of the saucepan to a boil over medium heat. Turn the heat down low and simmer, stirring regularly, for 10 to 15 minutes. As the sauce simmer, it will begin to thicken.


This recipe reads like a BBQ sauce. Could be close from the ingredients posted above.

By the way. This is not a Mississippi sauce. Named for Hoover, Alabama.

It’s named for the guy that originally created it… Hoover Lee.

He sold it out of his Chinese grocery store in Louise, MS for years, then locally distributed it, now it’s distributed however far wide.

The grocery store burnt down like 2.5 months ago. One of his son’s died.

I can remember stopping at that Chinese grocery store in Louise, Maybe 60-70 years ago when H-49 still ran through it on the Yazoo City, Louise, Midnight, Silver City route on 49-w to Belzoni and then on up to my Grandparents house in Isola. Dad hardly ever stopped there, even with a backseat full of kids in the coral pink and gray 55 Chevy. Had a butcher Uncle who owned a meat market and grocery store in Belzoni and that is where dad usually stopped. Those were the days when Chinese grocers and meat markets had screen doors with Harden's bread metal push plaques on the door, wooden floors, two rows of shelves down the middle and two single bulb electric lights hanging from wires from the water stained ceiling. Cooling was provided by an oscillating fan somewhere on a countertop.

I had no idea Hoover sauce was named after him. Google recipe request says it is named after Hoover, Alabama. I also had no idea Mr. Google was ever wrong about anything.

My apologies to Hoover Lee and the good folks in Louise.

As I recall, he had good Jacks penny cookies, Honey Buns, Nehi Grape drinks and those little chocolate dipped mint bars on a stick. Haven't seen the chocolate bars in years too.

Oh well - long gone memories of different days when I was a kid and PaPa letting us kids stay up late to watch Mr. Dillon on Gunsmoke (9:00 pm). Mr Dillon came on right after Mr. Paladin on Have Gun will Travel (8:00 pm). Both came out of Jackson TV stations, which came in pretty good after the TV antenna on the tall pole out in the yard was adjusted to point in the right direction to pick up Jackson stations 3 and 12.

Good thing you didn't get caught up in the rush hour traffic. Sometimes in Downtown Isola you will see four or five pickup trucks during the 4:00 - 6:00 rush from folks getting off at the catfish plant. Just as bad in the morning.

Being slightly familiar with MS north of Jackson, I would have guessed that Hoover sauce was named after great depression president Herbert Hoover. Same sarcasm as the east Texas delicacy Hoover pork...armadillo. Something to stretch the diet at little expense.

I guess in a roundabout way it was.

Hoover Lee got his American name because his family immigrated here when he was like 3 or 4 months old on a ship named after Pres. Hoover.
