Anybody got a good Oyster Patty recipe

Never heard of a "oyster patty".
Fried lots of oysters in my day for po boys or large bun.


ETA : Was thinking more like crab patty or shrimp party.
Not pastry.

Here's one from Louisiana Cookin':

Oyster Patties

4 dozen Louisiana oysters with liquid
1 onion, grated
2 Tbs butter
2 Tbs all-purpose flour
1/2 cup finely chopped mushrooms with juice
Creole seasoning, to taste
Cayenne pepper sauce, to taste
2 Tbs minced green onions
1/4 tsp lemon juice
12 pastry shells (individual sized)

1. In a large skillet, cook oysters in their own liquid by bringing to a boil, then simmering for 10 minutes. Sauté onion in butter, then blend in flour until smooth. Add remaining ingredients to oysters. Cook 5 minutes, then pour into pastry shells, distributing oysters evenly. Bake at 370ºF for 5 to 8 minutes. For finer textured pies, chop oysters before cooking.

Servings: 12

And here's one from McKenzie's Bakery (they sold the shells)

McKenzie's Oyster Patties

Fills 12 large or 36 miniature patty shells

4 dozen oysters and liquor
1 onion, grated
1 tablespoon flour
2 tablespoons butter, melted
1/2 cup chopped canned mushrooms and juice (optional)
Salt and pepper
Dash cayenne pepper
2 tablespoons chopped parsley
1/4 teaspoon lemon juice
12 large or 36 miniature* patty shells

Cook oysters in their liquor by bringing to a boil, then simmering 10 minutes. (*For miniature patty shells, finely chop oysters before cooking.)

Saute onion in butter; blend in flour until smooth. Add remaining ingredients and oysters.

Cook 5 minutes; pour into patty shells and bake at 375 degrees for 5 to 8 minutes.

They're not patties like hamburger patties. This is what they look like:

No more McKenzies, but in BR Baum's sell the shells, or at least they did a couple of years ago.

So this is like oyster stew? But in a tiny pie/pastry shell. I usually make an oyster pie for Christmas but it has a very different consistency

The ones I had many years ago were not as soupy as a stew. The filling was more like a paste.

In Metairie, you can get the shells at Zuppardo's, but they're kind of pricy. They have large ones, too - year round.

It's more like a paste and it more like a crawfish pie.

This is my go to:
1 sm. onion diced
1 sm. bell pepper diced
2 cloves garlic chopped
1T olive oil
1 pint oysters chopped
2 cups bechamel sauce
1/2 cup diced mushrooms
¾ cup Italian bread crumbs
½ cup shredded swiss cheese
½ cup shredded parmesan cheese
Salt and pepper to taste

Makes about 50 small oyster patties

My married daughter made her first batch of Oyster Patties based on her love of my wife's who learned from her mother. Her first attempt for Thanksgiving this year turned out very well. Living in north Texas my wife uses Pepperidge Farms Puffy Pastries. My kids would rather eat the oyster patties than everything else on the table. The only other tip I can offer is try to get oysters that have not been washed.

I get mine from Haydels. They are far better than the frozen ones. Looks like they ship them Pattie Shells

This has been a Christmas Breakfast tradition for my family for ages. Open gifts in the morning and have Oysters in vol-au-vents with Champagne for a mid morning breakfast.

Also, if you're in a pinch, Pepperidge Farm (I think) offers frozen shells, available in the freezer section.

small phyllo cups don't really hold up to the cream. You need more layering to hold the volume for a proper serving. You can buy frozen ones that do the job well. I also like to add varietal mushroom with the oysters but that's just me.
