Any use for breakfast sausage outside of breakfast?

We buy boxes of meat from Auburn University's meat lab and they always come with a 1lbs pack of pork breakfast sausage. We don't really cook a lot of breakfasts that use sausage so my freezer is starting to fill with a small stockpile of sausage. Outside of going out of the way to make more sausage heavy breakfasts I'm looking for other ways to consume it. Any decent non-breakfast recepies that would call for sausage? Off the top of my head I couldn't think of any except maybe Pizza.

Put it on a pizza. Brown it and add it to queso dip. Bisquick sausage balls are delicious (you can google the recipe). Who doesn't love biscuits and sausage gravy? It ain't just for breakfast anymore. I'd be more than happy to take some off your hands.

Make these quite often. 1 lb of sausage, a couple of cups of shredded cheese and a couple cups of bisquick is what I go with. I use my kitchenaid mixer to combine all the ingredients, then roll it into balls and bake around 375 until done. Usually less than 20 minutes. Sometimes it takes a little longer, but right around 15-20 minutes.

Velveeta, rotel, breakfast sausage queso dip

Breakfast sausage, Parmesan, and cream cheese stuffed jalapeños. With or without a bacon wrapper. My favorite game day food.

:looksaround: You can use it in chili if you allow ground meat in your chili. I'll sometimes do 50:50 cubed chuck and ground sausage in my chili.

Man. Anyone find these come out tasting like they need seasoning or butter or something? I think its the Bisquick because I made biscuits with boudin and pepper jack this past weekend and had the same issue I have when I do sausage.

I think next time I'm going to load the dough with a lot of seasoning to see if it helps. Maybe I should have been doing that all along

I always use hot sausage and never add any seasoning. Sometimes if I have buttermilk on hand, I will mix the shredded cheese and sausage together first, then mix some buttermilk in with the bisquick until it is slightly crumbly, and then put the cheese and sausage back in and mix it all together.

Jalapeno poppers.
Mix 1lb of browned sausage with a block of cream cheese. Slice jalapenos in half leaving the stem on and stuff with cream cheese and sausage mixture. Grill or bake until the tops start to brown and the pepper start to soften.

It's a personal preference, these are much better than the ones with just cream cheese and wrapped in bacon.

We use it for egg-rolls when we have family gatherings. Everyone seems to like them.

Recently I put1 pound of hot breakfast sausage in with 2 pounds of 80-20 hamburger meat and made two individual loafs of meatloaf and smoked them on a pellet grill. It was pretty good.

You can put it in a cornbread dressing. Plenty of recipes for that one.
