There was a really delicious version served at the most recent Dinner Lab that left me wanting more.

Looks good Motorboat. Fresh Market has cod on special this week and I plan making my own. I'll sub plantain chips for the tortilla.

It's real easy to make. My wife does it pretty regularly for parties. Think she uses shrimp, cilantro, avocado, red onions, lime juice or lemon juice, jalapeno, garlic.

In Baton Rouge for sure. Best ceviche I ever had was served in plastic shot glasses...in Costa Rica.

Mine also, their secret ingredient was a splash of orange Fanta.

Spent a week on the coast in Mexico back in June and good god I became addicted to ceviche.

Had it twice a day with some chips and avocado. I'm spoiled although we have some great hole in walls here in dallas that serve some damn good ceviche.

Mine is similar to motor boats except I add tomatoes and a splash of fresh oranges.

The best I had in a restaurant is at the sushi place at the Golden Nugget in Biloxi.
