I do not see the point in aging. Maybe hold onto a porter/stout for a month or two just because, but it is not going to make that beer that much better. The way I see it, booze is made to be consumed. Otherwise, wouldn't it already be aged?

So fridge temps preserve your beer, but they do not age them.

Possible the opening and closing of the fridge? Would that do anything to changing temperature?

I really do feel like some beers get better with age. Not all styles, not even most styles, but some of them do.

As to the last point, it would be a lot more expensive for the breweries to age it for you, especially once it's bottled. Obviously they do all the barrel aging for you.

Correct... Aging and Cellaring are two different things.

In a fridge you are aging the beer and you aren't really doing any harm to the beer, but it's not maturing like it would at cellar temperatures.

No. It's closed and stays cold pretty much the whole time. I guess i need to decide if i want to age my beers in the fridge, where they won't really age, or use the fermenting fridge, which gets up to 70 during fermentation, or i can set to 55 during non fermenting periods. Problem, is that temperature will fluctuate from 55-70.

If it's a dedicated beer fridge, why don't you put a ranco on it and keep the keep at 50F instead of 30ish.

ETA: you may be able to simply raise the temp of the fridge up to the highest setting and accomplish this as well.

Yeah, i guess i could. I didn't before because i didn't want to drop 100 on another temp controller. I have a johnson on my ferm fridge.

I built a two temp stage controller (will heat and cool) for my ferm fridge this week using an STC 1000 controller for under $35.

Only draw back is all temps are in Celsius and that requires math.

If you do a search on HBT or YouTube for 'STC 1000' you will find all sorts of info.

Bug, I'm not about to question your findings from your aged beers, but I don't think the fridge is the problem, unless it doesn't work properly and wildly fluctuates in temperature.

I've stored beer in a closet for years now, and I don't recall any that suffered from it. I think a stable temp may be more important than an exact temp

I got one of these bad boys set at a constant 55F on a dorm fridge. Works like a charm and everything I've taken out of it has tasted great. Especially a 2012 GR

Hmmmm my beer fridge I've noticed gets extremely cold at times even when setting is at the lowest. I need something to keep a constant temp
