Does anybody bread their shrimp with cornmeal?
I live in California, and good Cajun food is terribly hard to find. I was going to pick something up and saw a place nearby on yelp that someone said flew bread in from New Orleans every day. I looked at pictures and it didn't look like Leidenheimer's or even a reasonable variant but figured that I'd stop by and try a poboy. I haven't had a decent poboy for about 15 years. The poboy was actually pretty decent, the bread was good but not traditional poboy bread (to me that means shatters of flakes when you bite into it). One thing I noticed right away, was that the shrimp were breaded with just cornmeal. It gave them a good crunch. I just haven't seen that before.

My mom used to fix them that way because my dad liked it. I always found straight cornmeal more gritty than crunchy.

Corn flour and/or cream meal (very finely ground cornmeal) are common enough, but coarser ground meal (like is commonly used w catfish) is less popular. Commercial fish fry mixes are mostly corn flour/cream meal.

I had them that way at Middendorfs...it was a little different, but pretty good.

Micing 3/4ths corn flour with 1/4 cornmeal and a bunch of seasonings is the way to go

What's the normal breading for shrimp?

I use an egg wash, then seasoned flour and fish fry mixture.
I think at least....I've fried shrimp 1000 times and now can't remember exactly. Late night last night.....

I've tried several options and I've settled on Panko's Japanese bread crumbs.
