FDB What if, How, What, and Why Not Pop-up Restaurant Thread.

We have some pretty rich talent on this board. Regulars here pretty much run the gambit of the restaurant business from both sides of the swinging door. We know what we like. We know what we don't like.
If we HAD to, could we as a group assemble a pop up restaurant of a high quality that could return enough profit to benefit a charity?
These things only seat a small amount of people; usually 100 or so. The menu is fixed. High quality ingredients are used. The patrons are extremely pampered with place cards, personal service, and surprise menu items. All for a premium fee.
Overhead includes renting a restaurant on a normal off night for a percentage of profit, staffing, and advertisement.
I would argue that we have enough folks here to put together a menu, small wine list, and craft beer selection that could rival any other. We know enough about fine dining to serve such a meal in grand fashion. No detail would be left out. One night only.
It would take a lot of planning, and of course volunteers to pull it off. I think it could be something that we could be proud of in the end.
I've always wanted to work in a restaurant, even for a day. Some of you have admitted that you have always wanted to run one.
Any interest in trying it for charity?

Seeing as a bunch of us here do this on a daily basis, ABSOLUTELY. I'll volunteer and I'm willing to help do whatever we need to. I can also find a venue with a few phone calls.

I think he could care less if they're are grammar problems.
If the charity is The Walter J. Martini Foundation, a non-profit that helps the minority middle aged white male WASP into retirement I think I could chop an onion or two and quality control the wine list.

Easier stuff:
Wild caught tuna, royal reds, Maine lobster, Wagyu beef
More difficult:
A quality bread baker, cheese monger, sommelier.
I like to make rich stocks, risottos, and sauces.
We'll likely never pull this off, so it's sorta like fantasy football to me.

What on earth is keeping you from working in a resto? That's not exactly an unattainable dream. Cafe Reconcile, Cafe Hope, Libertys Kitchen.....plenty of nonprofits around that need energetic volunteers. Your local soup kitchen could use your talents.

You and I could plan this alone in under 2 hours. I have all the sources for food and equipment, all we'd need to do is decide on labor and talent.
I'm best with sautee and sauces, I have a great baker anytime we need her, my buddy just graduated sommelier (or got certified) and he's very talented, you're knockin down risotto and stocks and sauces too.
I've got a venue downtown that is less than 800 for the night, has indoor reception and outdoor for 150-200 with tables and chairs included (i could front that $ until we collected).
Band is no problem, and I've got the catering and alcohol permits for anywhere in the state.
Easy peezy.
