How to make crispy homemade fries?

I’ve been switching up cooking home made fries trying to get them crispy. Today I tried to cut them in the same size and had my oil at 350°. They cooked but aren’t crispy. More of a soft floppy texture. Pretty good tasting overall. What am I doing wrong?

You need to fry them twice.

flash fry then freeze for about an hour or so then fry again
you can also make pretty crispy fries in the oven and they are a little more healthy without all the oil
eta you also need to soak them in water for about thirty minutes to release starch before the first fry

Air fyer works better than a conventional oven for stuff like that.

Cut them, soak in water for a couple hours or longer, remove and dry them, fry at 315 for about 5-7 mins and put the aside, turn fryer up to 350 fry again for 2-3 mins.

This is the right answer. I ice the water and only soak them for 30 minutes or so.

Close to what we do at the camp.
Put cut fries in a pot of simmering seasoned water. We put a little crab boil and garlic salt. Right when they're about to come to a boil pull them and lay out on napkins. Should still be firm-ish. Grease to 365, fry till crisp.

That is how I do mine. It takes some prep but they come out perfect.
At the very minimum you have to double fry.

Lots of great advice here. If you want to not only get them crispy but step up the flavor a notch, snag you some beef tallow for frying.

Soak the cut fries in a solution of salt and cold water for 20 minutes (1 part salt to ten parts water). Rinse for a bit to get the salt off and Dry as thoroughly as you can and put them in the freezer for 15 minutes. Take them out and Fry until some the edges just slightly turn brown. Take them out of oil and wait 15 minutes for them to cool down a little . Fry them again until they turn the color you desire. All the wait times involved can be used to prepare the rest of your meal.

Another vote for store bought frozen using the regular oven's convection setting. Cook the fries on a wire rack set in a sheet pan. Quick, clean and possibly cheaper once you factor in cost of oil. Same cook method will revive leftover fries, chicken strips/nuggets, etc.
