Recommend a Sci-Fi/Fantasy series for a complete newb.

I've been wanting to try my hand at a sci-fi/fantasy series for some time, but I've never taken the step (mostly stuck to run of the mill crime fiction).
I recently read the Red Rising trilogy after seeing it recommended on here, and that might be the first true sci-fi/fantasy series I've ever read. I enjoyed the hell out of it.
I went to Books a Million last night and was overwhelmed, and on the spot googling for "The Best Fantasy Series" for newbs didn't really help.
I kept coming back to The Wheel of Time series (mainly because they had the whole thing) but man that looks daunting for someone new to the genre.
Any suggestions on where I should begin?

I wouldn't try something as big as Wheel of Time at this point. Try something in the more classical vein like The Chronicles of Amber by Roger Zelazney or The Martian Chronicles by Bradbury. Also, The Mote in Gods Eye & The Gripping Hand by Niven & Pournelle.
After that you can progress into Asimov (Foundation series) and Tolkien (LOTR)

Not trying to be a dick, I just really hate that book stores have blended what I consider two vastly different genres in to one.
If you're looking for more swords than lasers, I would recommend either The First Law Trilogy or The Gentlemen Bastard series as good introductions to Fantasy.

The Mistborn Trilogy is another good one for "newbs", imo, I'm the fantasy side.

Whatever you pick - be sure the series is actually finished or will be soon.
I'd say frick it and jump into WOT - mainly because i love that series and I'm a fan of the big world-building series. Plus it is actually a really easy read.

The Wrinkle in Time Quintet: Books 1-5 by Madeleine L'Engle consists of A Wrinkle in Time, A Wind in the Door, A Swiftly Tilting Planet, Many Waters, and An Acceptable Time.
Called Young Adult reading, but is a very entertaining series for adult readers, too. And a great blend between SF and Fantasy genres.

I think Hobbit & LOTR is a must if you like fantasy.
After ASOIAF I've read Kingkiller Chronicles and The Stormlight Archive. I have really enjoyed both.
I recycle and reread a series after a while. They are in depth and I miss some things in the beginning that mean a lot more once you read a second time.

It is an ok series but the author is highly overrated. It could be far shorter and much better. I actually think his wife wrote much of it. No way a man wrote some of the female characters and scenes.

As a transition from crime to fantasy I would recommend the Dresden Files. It is about a wizard/detective in Chicago.

Illuminatus Trilogy by Robert Anton Wilson.
A little tough for the first 50 pages or so but once you "get it," it's hard to put down. Mindbending stuff. Written in the early 1970s and sometimes it shows. Seems politicalat first (and sometimes is) but goes into far deeper territory. Very based in the world of conspiracy theories: Illuminati, JFK Assassination, Ancient Atlantis, and more.
Not for everyone, but if it fits you, you'll thank me.
