frying seafood for 30 folks--what says the F&D broad do I need--

They want oysters, shrimp and fish. How much of each would you buy?

I think I will serve with a good recipe of tater salad I have and cole slaw to save having to deal with fries.

My thought is a total of 5-7oz per person. 40% fish, 40% shrimp and 20% oysters. I find more people eat fish and shrimp than oysters.

Shrimp are a little tricky because you buy it head on and in the shell. My guess is you loose 30% by weight to prepare them for frying.

.5 pound of protein per head, roughly. You choose the mix. I'd go 50% fish.

And I want to come by and eat as well. Seriously, though. Get two fryers if you can. It will speed up the process. I don't know exactly how many pounds of each you will need, but I'm guessing around 6 pounds of shrimp, 7-8 pounds of oysters and at least 30 fillets or fish. My numbers could be way off because I've never cooked that much for that many people. I'm just scaling it on cooking for the 7 people I did a seafood fry for.

When I fry seafood at my its roughly 1/2 lb per person plus fixins. I'd do white beans and rice in the place of potato salad.

For 30 adults

10 lbs fish
6 lbs shrimp
1 quart oysters
3 lbs dry white beans
5 cups raw rice
2 16 oz packages coles slaw
4 loafs of french bread
