They want oysters, shrimp and fish. How much of each would you buy?
I think I will serve with a good recipe of tater salad I have and cole slaw to save having to deal with fries.

My thought is a total of 5-7oz per person. 40% fish, 40% shrimp and 20% oysters. I find more people eat fish and shrimp than oysters.
Shrimp are a little tricky because you buy it head on and in the shell. My guess is you loose 30% by weight to prepare them for frying.

I just want to know where to get good tasting oysters for frying. I've tried the shite ones that are shucked and come in the plastic containers at the grocery store and they taste terrible.

.5 pound of protein per head, roughly. You choose the mix. I'd go 50% fish.

not the grocery store. go direct to an oyster house or a seafood market

I don't know exactly how many pounds of each you will need, but I'm guessing around 6 pounds of shrimp, 7-8 pounds of oysters and at least 30 fillets or fish. My numbers could be way off because I've never cooked that much for that many people. I'm just scaling it on cooking for the 7 people I did a seafood fry for.

When I fry seafood at my its roughly 1/2 lb per person plus fixins. I'd do white beans and rice in the place of potato salad.
For 30 adults
10 lbs fish
6 lbs shrimp
1 quart oysters
3 lbs dry white beans
5 cups raw rice
2 16 oz packages coles slaw
4 loafs of french bread

Wilson's Oysters in Houma. Fresh shucked that morning. Cheap as hell for half gallon of normally big oysters. This time of year you can't get them in their own juice, but in the colder months ask for tub in own juice. Salty Salty.

I thought about white beans but I am going to be serving out of my truck basically and don't want to have to carry a burner to warm them up.
I would rather poboy bread myself but some are asking for hushpuppies. I am cooking so I bet it's Leidenheimers since the seafood market close to me carries it!

I have two of these which I highly recommend. Only thing is you probably want one on a stand. I put concert blocks under them

I called them this morning inquiring about a combo unit, a 4 gal fryer and a small broiler on a stand.
Cook white beans at home, place in alum. pan with a top, wrap in a towel and put in a smaller thick wall ice chest. It will stay warm for hours.

Thats true, I cooked 15 gallons of white beans for a fundraiser. 5 gallon buckets stayed hot for hours.

Don't do white beans. Slaw, Potato Salad and Hushpuppies. Maybe you can sub fries for potato salad. Also get at least a half gallon of oysters for 30 people if not a whole. A gallon typically weighs 4-5 pounds drained.

I got to travel about 5 hours so I think I will stick with potato salad. I might make hushpuppies.
I have four baskets so I was thinking fish, shrimp, oyster, (maybe hush puppies or maybe fries) in basket four and I should be able to crank it out so that no one item is out very long and the food is hot.

U got a good hushpuppy recipe?

Hush puppies and salad. Like a sensation salad. Make the dressing ahead of time and then easy to toss together

For that many people I'd use frozen ones but I bet there's a damn fine recipe in the FDB Cookbook.
