How difficult is it to modify a boat from a 12V trolling motor setup to a 24V setup?

Short answer, you connect one battery to the one you have. Thats it.
Make sure you connect it properly. Just a matter which post to which.

Get 24v trolling motor
Get another battery
hook your negative coming from the trolling motor plug to one battery and the positive on the opposite battery then put a jumper from the open positive and negative

You will have to upgrade wire and breaker/fuse. Minn Kota has a chart on their site.
I put a MG tour 82# on mine. I pulled #6 with a 50A circuit breaker. That what was recommended.

You should re run your wire and up the gauge.
Just a tip: buy marine grade wire. There is nowhere in Baton Rouge to buy marine grade wire. Order online. Its expensive but wont corrode at terminals or connections.
