Not my pic, but basically this:
No blowing involved. Hooked up the CO2 to the carboy cap so it's pushing the beer to the keg instead of gravity.

I don't have a connection there there. I just shove the orange part of the carboy cover into the CO2 hose. The fit is actually perfect. I should probably put something more permanent on there, but it's working, so why mess with it?
Pushing at about 3psi. Anything more than that makes the carboy cap want to fly off.

Got a hold of some neomexican hop plants. A late start, so not expecting anything this year. We shall see how they like Tennessee soil.

Finally some progress on my home brewing setup! I bought a 3500w induction cooktop from the Internet, and it was a 20a nema 6-20p plug. The room I'm moving into had a range outlet on a 40a dual pole breaker,so today I changed that to a 20A breaker, swapped the box out, and wired in a new outlet. It took 3 trips to Home Depot but it works and is properly installed:
The cart lets me wheel it over to the laundry sink for chilling and cleaning, and the height is perfect to be able to fill my chronical without lifting. So no more walking around with 6-7g boiling water for me!

I don't. The harsh lemon character scares me. I do have a good crop of Nugget I need to harvest. I was going to brew this weekend and use them as a fresh hop addition but didn't have time to get to the LHBS.

So who all is submitting beers for Clash of the Carboys?
I'll be submitting an IPA along with the undoubted hordes of other IPA's submitted.
I was going to brew a double IPA i had planned out, but wanted to submit at least 1 beer this year to a competition. So i had a galaxy/nelson IPA i had planned for a future brew session i plan on submitting. I'm pretty excited about this one. I think i have a decent enough grain bill down, and i know Galaxy and Nelson are delicious, and i'm using some Amarillo to bring it all together.
What do you guys plan to brew for the competition?

I'm a maybe. I'd have to brew here pretty quick, so I'm not sure if I'm going to be able to swing it. If I end up making something for Gulf Brew in Lafayette the same day, maybe I'll just submit that.
Still riding the high of taking 1st and 3rd at Nottoway last weekend. I knew I had a couple of good beers, and thought maybe one would place. Didn't think both would. But I'll take it.

We're slowly getting there.
It seems like the girls destroy a room as fast as we can unpack and get it straight.

Do you guys acidify the sparge water? I fly sparge, and have been reading up on negative affects if the sparge water is more alkaline. I use BR water and according to the water report, ph is about 8.8, which would fall on the alkaline portion of the scale.
I've only been acidifying the mash water, but am wondering if i should acidify the sparge water as well to reduce excess tannins/astringency in my beers.
Now i haven't noticed any astringency in my beers, but that doesn't mean my beers are reaching 100% of their potential.

No, I use RO, but even when I used BR water I didn't acidify.
The mash already has minerals and enzymes that will act as a buffer against pH changes. So even though you are sparging with 8.8 pH water it's only going to change the mash pH so much in the time it takes to collect your wort.
I do try my and keep the mash below 170F when sparging, but that's just habit and not from experiencing off flavors as a result of high sparge temp.

yes, but it could be confirmation bias.
I didn't brew a ton of light hoppy beers pre-RO so someone like BMoney or S14 may be able to give a better compare/contrast.
btw I only use RO water for light colored beer, BR water is pretty much perfect for porters and stouts.

I typically use RO water for my hoppy beers only. Like LSUGrad00 said, BR water is perfect for porters and stouts. I didn't bother when brewing my grisette, since it wasn't going to be hoppy at all (and mostly because I was lazy). But I did use phosphoric acid to get the pH down and gypsum, because I always use gypsum with our water.
I'm also the guy who hasn't replaced the hydrometer he broke 6 months ago, so take anything I say with a grain of salt.

So i'm probably going to go the distilled water route with this IPA. I've done it once before, and i've brewed with RO water once.
All mineral contents are zero and the PH should be 7.0 correct?
ETA: Also, what water profile tools do you use? I've been using brewersfriend, but i also have bru'n water and may use that this go round.
