Bay St Louis.
The Bay Town Inn looks nice, but I've never gone into any of the rooms. There are tons of vacation rentals as well if you want a stand alone house. There are many good places to eat and chill, and multiple little areas to walk around.
The Sycamore House is a great place to have a nice dinner.
ETA: If it's this Saturday there is a play at the Little Theatre (BSLLT), On Golden Pond. It's a neat place.

Duh. Natchez on a weekend is a good time. If you do this over the holidays it's even more fun b/c some locals who have moved away(or away at college) come back to make the whole town more 'alive'.
Plenty to do for you two on an overnight excursion. Get that suite over Bowie's, Natchez Grand(Eola is overrated), or find a BnB just north of Downtown and it's a 5 min walk down the bluff to Main(everything).
Do it.

Go to the Ville. Magnolia cafe during day.
Hit Morel's or satterfields on the water and enjoy the view.
Oh yeah, walk around hemingbough and maybe pop the question! Lol

The Camp
If you don't have a camp...A friend's camp or a VRBO.
If you want more civilization: A casino in Lake Charles or Biloxi.

You can do that in St. Francisville and it's only 40 minutes from Baton Rouge.

Nottoway Plantation in White Castle. Get there for lunch and order a fried oyster poor-boy (if its not on the menu, they'll fix you one anyway).
After lunch, change clothes, relax and walk the grounds. Later in the afternoon, take the guided tour of the building and grounds.
Head back to your room afterwards, change clothes and make a reservation for a table for two on the veranda at The Mansion Restaurant.
Retire to your room and make magic happen.
Wake up the next morning and hit the breakfast buffet before checking out.
You're welcome.
