As someone who has roasted a whole pig or two, that seems fair.
Pig itself is gonna cost $250+
--prep
--cooking time
--packaging
--markup
Sounds about right.

What kind of pig is it?

Sounds about right.
I've roasted many pigs and no way that's worth $600. maybe if they came onsite and did it with cleanup, etc.

Call around. Whole pigs are over $2 a pound at my grocery.

Well apparently someone is paying $600 or he wouldn't throw it out there. (Unless he purposely quoted it that high b/c he really doesn't want to frick with it)

Yeah, yeah.
75-80 lb pig is about $250-300 seasoned and butterflied from the butcher. (Restaurant could do that, but you'd have to pay them to do it, so it's a wash).
Somebody has to spend 5 or 6 hours cooking it.
Somebody has to pull the meat.
Somebody has to put it in a box.
Somebody has to transport it.
shite adds up.

No SHITE?? I called yesterday and today - still waiting for the owner to call me back because no one else can give me a price. 6 hun he can keep it.

I got one from some place down near Laffy last year and it was $325. It was a true cochon de lait meaning it was the whole damn hog, not pulled pork. That's what I was assuming this was.

To me the high price plus no return call means this isn't a business they really want to be in. Must not be worth their time.

Try driving over there and talk to the chef
