I could only stomach something light today. My warehouse guy was out sick and we were insanely busy all day long. I'm going to sleep so well tonight. Second bottle of rose' has been opened.

Had the oysters alabama (white BBQ) and oysters lafitte (bacon, crawfish tails), and Nashville chicken (Cornish hen topped with pickles and pepper ranch hot sauce and served on bunny bread)

Oysters were great albeit small for the price. Chicken was interesting and something I'd order again. Great beer selection

made this recipe from F&W mag after it caught my eye earlier this week.

Glazed Mackerel with Fried Eggplant and Mojo



My plating sucks. The flavor didn't.


Couldn't find spanish mackerel so I went with wild caught black drum filets instead.

Also other substitutions / changes:

x used fancy eggplant instead of baby

x instead of a habanero and a Fresno I used a jalapeno pepper for the mojo and an Anaheim for the glaze

x to the glaze I added in addition: fish sauce, beer

This mojo recipe is fricking unreal. could put it on a burger, eggs, just about anything. Had a bottle of 2011 Robert Hall chardonnay with it.

Thanks wink. Ol girl is usually pretty rough on me and even she said it was delicious so I'll chalk that up to a win for tonight.
