Not really a Hollywood celebrity, but former VP Dick Cheney.

A friend who is retired secret service was detailed to Cheney when he was campaigning in 2004. He said that Cheney always greeted him at the beginning of the day, made sure his detail had time to eat something, etc. He said Cheney was his favorite out of all the different people he was detailed to in his career.

Trindon Holliday was a prick. Shaq is nice. Russell Shepard is nice. Chase clement is really nice.

Wolfgang Puck. Very down to earth. Was doing a demo and dropped an f-bomb. He laughed and said, "it's ok, we're in Texas".

Daniel Day Lewis lives in the woods and cobbles shoes between movies. I'm torn between thinking that's unpretentious or the most pretentious thing imaginable.

You won't find anyone in the industry who has a bad word to say about Timberlake (aside from his music not being all that great). The guy comes to work, ready to roll, doesn't always bring a big arse posse around to dote on him, gives it his all, and is genuinely a humble guy. He's pretty much everything Bieber isn't.
