You need to support the locals. Pick two abitas, a nola, lazy magnolia, tin roof, parish, and LA 31.
Then you will need to have several of the macro big names so you will be able to keep your general customer base happy.

Founders is coming to Louisiana. Get their Centennial IPA or All Day IPA on tap.

Have a good local selection from Parish, Nola, Tin Roof.

Then have BMC offerings to appease the masses.

Just stay local... get Tin Roof, Parish, NOLA, Bayou Teche, Abita, and then some of the newer ones when they come available.

If you branch out past that, try Sierra Nevada, Sweetwater, Terrapin, Saint Arnold, and Lazy Magnolia.

We will have 26-30 taps, depending on how it all lays out, goal is 30, and we will have a private keg table in banquet room with two taps on it also

Def. have a few locals: Parish, Abita, LA 31. Don't waste your taps on any of the 5 big boys: Miller, Coors, Bud, Bud Light, Michelob Ultra. Bottles are the way to go for those.

Central...26-30 taps

Don't want to offend anyone, but will Central's market support this? I'd think 10 at tops, then a decent small inventory bottle selection on the chance you get some mavens passing through. I could see a bunch of kegs sitting around getting stale.

Another thing. I wonder if having BMC's on tap is a good idea? I would assume serving nothing but tap is the more profitable route, but having bottles and tap may be bad idea. I could see most people just ordering bottles, leaving your tap to age.

Just a question. No personal experience in this field, aside from countless hours as a customer.
