I'm not a big rabbit hunter. I've only cooked it a few times.

A friend is giving me 5 cleaned rabbits he killed this week - vacuum sealed. No head.

I've only ever made a stew. Browned the rabbit and removed them. Browned seasoning. Made a roux. Added rabbit and liquid. Took the rabbit out after a few hours and deboned. Put it back for awhile.

Served over rice.

Give me some new ideas please.

Tia.

Forget the roux. Just smother those bad boys until the meat starts to fall off the bone. Mmmmmmmmm.

I've only killed one rabbit in my entire life (cotton tail). All I know is that my dad cooked it in a skillet and to this day that is the most delicious meat I've ever tasted. I don't know how he prepared or cooked it other than in a skillet.

I had some rabbit about a year ago that was killed in the delta by a coworker and it was nothing like I remebered that cottontail tasting, this was more greasy and gamy tasting.

That's my CSB I guess...if you cook the right kind of rabbit the right way then it's pretty tough to beat

Cottontail rabbit is one of the best tasting wild game to be found.

I like it lightly seasoned and fried.

My mom always pressure cooked for awhile, used a batter similar to chicken batter, salt and pepper, scramble some eggs and made made a pan of cathead biscuits. No leftovers for sure.

Try a Sauce Piquante. Start the same as you described, but after roux is done....add one 16 oz can of tomato sauce and shake in a good bit of Worcestershire sauce. Add bell pepper. Brown some sausage separately and add that also. Add rabbit after it has been cooking awhile. Cook until tender and serve over white rice with garlic bread and salad.

Had anybody mentioned rabbit & dumplings? It was a staple at my house when I was a kid and my dad had beagles.

Quick side note, the old man had a car and not a truck for a while and would carry the dogs in the trunk. No bullshite.

Got a couple cooking down in a gumbo right now. Didn't have time to smoke 'em though. Wish I had, but didn't plan for it.

Brown it and make a gravy and add a half a can of cream of mushroom. You will not believe how well it compliments it and doesn't liten the gravy either.
