breast em all out and make sausage at the end of the year. grey duck, spponbill, squelers, even some mallards get thrown in sausage pile. Got about 50 lbs right now.

Gumbo, fried geese breasts are AWESOME ( cut into strips ), sausage works well. My buddy beats the shite out of a couple geese breasts and batters and frys just like country fried steak and its pretty freaking good. All kind of ways just have to figure what you like the best.
