I'm pretty sure once you begin the process of kneeling the ball, the okay is over. Just recently someone in college tried to fake a kneel in the endzone on a kickoff and the ref blew it dead

Ten men in the huddle. Go into legal formation with no one near the sideline of your own team. Wide receiver sneaks on to the edge of the field. QB hikes after he is set. Defense is scrambling over to get to the open WR. Throw ball to uncovered man.

It can't work in some leagues where once the QB starts his kneel, the play is blown dead. This means that there is a great chance of the play being whistled dead before the QB can throw.
