I prefer the taste of deer honestly. That is a the ratio that I have always grown up with so that is what I use. 60/40 seems like it would be very greasy. Of course, when we do our deer sausage, we buy pork fat from the meat processor(much cheaper) so it is mostly fat with some meat.

I don't fault any man for charging and making what he can. The market obviously supports what he charges.
All of that said...I'd rather eat straight pork or beef sausage anyway.

Thing about it is, the man provides a service and there are those that are willing to pay 300.00, not to have to screw with it....Like me....I have a grinder and stuffer, but between hunting/kids/wife/chores/work/football/etc.....I never do it myself...ever!...convenience....I pay for it.... My Grandfather probably turns over in his grave because I do, but I do....Some are worth it and some are not...I pay more than I should/could because tramontes makes the best jal/cheese I have ever had made...It doesn't need a thing...I like it that way...It cost a lot...maybe I shouldn't be a lazy arse and do it myself, but I haven't yet...
I can tell you this, if I was in the business of deer processing, I would make sure it would be worth my time, in other words, profitable.... The man is only telling you guys how it is... He has to make a profit, it's not just a money making hobby, it's a business...IF his product is good enough, he can command 300/deer, if not, he won't be in business long... Its just simple business...The American Way...So he does a little indirect advertising... I would...

I have no problem with the guy making money. Biz is biz.
But to come here and trying to justify his price and stating $2.99 a lb for pork fat, well, he fricked up.

I know a couple of processors in SE Texas that will charge 2.99 per pound for smoked deer/pork sausage but that includes the processing of the deer. Normal processing without making into sausage is usually around $65 to $70 for a quartered deer.

He said 35# of deer and 35# of pork=70#. $210. That's $3.00lb processed. Not $3.00 for pork.

I'm not knocking anyone got charging anything. I'm just a consumer, I see business x charging $300 for a service and business y charges $110 for a similar service I'm gonna at least try it out. Just passing the word along, I know a lot of ppl that can't afford $300 bucks/deer. The drive is about 1:10 min. One way from BR by the way if anyone is interested.

I really wasn't trying to justify my prices...I was simply trying to show why the cost can get so high. I wasn't trying to sway anyone to my business, it is a part time business that consumes more of my hunting time than I ever intended it to. But I know from past experience a lot of these guys are cheap because they cut corners...things such as batch processing. I am just an average Joe that had a couple bad experiences with processors that decided to open a shop that treated customers fair and give them a superior product. Sorry if I rustled anyones feathers.
