My dad taught me at a young age how to tie knots.. I have since then forgotten most of them. Which knots should I know??

I was on a boat yesterday and only 2 out of 6 could tie and rig lines for snapper fishing. The owner of the boat and myself had a long day!!
The owner of the boat is one of our vendors and I was supposed to be on-board just as a client enjoying myself. I couldn't just sit there and watch grown men wait for the captain to get a chance to re-rig their lines after breaking off. I turned into a deck hand I guess you could say. I didn't mind but I can not understand how someone goes through life not knowing a few simple yet practical knots.
