Cooking for the girlfriend again tonight.

Thin boneless pork chops pan fried in olive oil. Sauteed grape tomatoes, red bell pepper, vidalia onion, button mushrooms, and fresh garlic topping the chops. Served over angel hair pasta. Salad and garlic bread.

Beer, tea, and no loracets.

I'm boiling some fresh shrimp from the gulf I bought off of the shrimp boat yesterday. Mrs4lsu2 isn't feeling boiled shrimp, so she will be eating fresh baked or grilled shrimp of some sort. I'm thinking of making the butter/ garlic/ Parmesan sauce that Acme does with the char-grilled oysters and doing a scampi or the like.

Bought the last two tuna steaks from fresh market that were on sale $10 less per pound that usual.

Doing seared tuna steaks, Asian broccoli slaw, and garlic risotto

smoked some sausage today, that i stuffed last night. didn't feel like cooking anything elaborate, so i just brown some of the sausage in a cast iron skillet, with some onions, peppers, and rice.

see below for a pictorial account of the entire process.

cubing and seasoning the meat on thursday.



grinding and stuffing on friday night.



it looks disgustingly pale in the pictures for some reason but it wasn't actually that color.





at beginning of the smoke. using a masterbuilt w/ hickory wood chips.



at the end of the smoke. a little uneven in some spots; probably need to rotate halfway through next time.





out of the smoker and into the ice bath.



slicing a link up for supper.



into the cast iron skillet. i chose the link that had the temperature probe. thus, the weird looking holes.
