You should buy the whole frog though. I think the meat in the frogs torso tastes better than leg meat.

One time while doing some consulting I went into a small country cooking restaurant for lunch. On the buffet was fried frog legs. All one could eat. The frog population was decimated that day.

I know it's not NOLA, but believe it or not, Nagoya has some very tasty frog legs. I used to plow through a few saddles in a sitting.
