Recipe to use 3/4 of a Rotisserie Chicken

I basically only used the legs from this rotisserie chicken, and I'd like to use the rest of it to cook dinner tonight.

This is what I would do, but if you want something lighter serve it cold with fruit and a nice bold salad.

If ya wanna keep it simple, use it with a box of Zatarain's and some water in the rice cooker. Press play.

Throw it in a crock pot with some liquid smoke.

A lot of good ideas in here. I'm think about doing Treedawg's chicken and dumplings. Has anyone tried it? I'm in the mood to cook an elaborate meal tonight.
