Grilling Artichokes

Ok, so I grilled some chokes last night. Cut them in half, cleaned out the choke, basted them in olive oil and garlic, but the never got soft enough to eat. Any advice?

The larger globe artichokes I most often see in local stores are too old to grill. Try to find the smallest ones you can, then trim/peel aggressively. Cut way more off than you would for a stuffed or steamed artichoke. I frequently grill chokes basted with olive oil and lemon....never had em stay tough, but as I said, I get rid of anything that's remotely hard before cooking.

Get the baby artichokes. They have them at Rouse's and Whole Foods that I know of. I like to grill them cut in half.

Soak them in water for a few hours before.

You have to boil or steam them first...
