Seasoning Recipes

Seemed like a good idea to post some blends and have others post their home developed recipes for seasoning blends.
These first two are very old to me and probably not original to me (read this as stolen from others). Would enjoy seeing what others post and this could be a go to thread when others ask for seasoning blends.
Emeril’s Creole Seasoning
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon onion powder
1 tablespoon black pepper
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried leaf thyme
Take salt out for low sodium
No salt Creole Seasoning
2 Tablespoons onion powder
2 Tablespoons garlic powder
2 Tablespoons dried oregano leaves
2 Tablespoons dried sweet basil
1 Tablespoon dried thyme leaves
1 Tablespoon black pepper
1 Tablespoon white pepper
1 Tablespoon cayenne pepper
1 Tablespoon celery seed
5 Tablespoons sweet paprika
Paul Prudhomme’s Basic Cajun Seasoning Blend
2 teaspoons Paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dry mustard
1 teaspoon salt
1 teaspoon thyme
1/2 teaspoon black pepper
1/2 teaspoon white pepper
1/2 teaspoon cayenne

50/50 salt and pepper
add a smidge of onion powder and garlic powder
If you want it spicy add some cayenne.
Done.

You can mix any of these and leave the salt out. Mix and taste and add more red pepper if not hot enough for you.

I have a couple to add:
Montreal Steak Seasoning
1/2 tsp garlic powder
1 tsp coarsely-ground coriander seed
1 1/2 tsp coarse salt (like kosher or sea salt)
1 tsp dill weed
1 tsp paprika
1 tsp cayenne pepper
1 tsp freshly-ground black pepper
1. Mix all ingredients. Rub on meat about 1 hour before grilling or roasting.
2. This is a delicious rub to use on grilled steaks or on roasts that are cooked on the grill using indirect heat.
3. This recipe yields about 1/8 cup.
Tony Chachere’s Original Creole Seasoning
Basic mix
26 oz box free flowing salt
1 ½ oz ground black pepper
2 oz ground red pepper
1 oz garlic powder
1 oz chili powder
1 oz MSG
For seafood, to HALF of above recipe, add
1 tsp powdered thyme
1 tsp ground bay leaf
1 tsp sweet basil
1. Mix and store in an airtight container.

McDonald’s Hamburger Seasoning
Use this seasoning on all Mcdonald’s hamburgers.
4 Tbs salt
2 Tbs Accent® (MSG)
1 tsp ground black pepper
1/4 tsp onion powder
1. Mix all ingredients well. Use in a spice shaker with big enough holes for the pepper to flow.
2. Don't be stingy, put a lot on the patties while they're cooking. A good amount of it will "float" away with the fat. This is an important factor in the "McFlavor." You'll need to use even more on the Quarter-Pounder patties.

Today, Old Bay is used on grilled fish, steamed shrimp, fried chicken, french fries, and potato salad, and for vegetable dips. The exact recipe is a secret, but this is a close approximation

2 Tbs celery salt
1 Tbs dry mustard
2 tsp ground black pepper
2 tsp ground ginger
2 tsp sweet paprika

Old Bay Seasoning is a spice blend no kitchen should be without. Old Bay is a distinctive seasoning loved around the world for its bold, one-of-a-kind flavor that adds zest to seafood, chicken, salads, and much more.
It's great also to season poultry, French fries, hamburgers, popped corn, pizza, baked potatoes, meats, deviled eggs, baked casseroles and fish.
1 Tbs ground bay leaves

3/4 tsp ground nutmeg
1/2 tsp ground cloves

Blackened Seasoning
Recipe for blackened seasoning for fish or chicken.
2 tsp ground paprika
4 tsp dried leaf thyme
2 tsp onion powder
2 tsp garlic powder
1 Tbs granulated sugar
2 tsp salt
2 tsp black pepper
1 tsp ground cayenne pepper, or to your taste
1 tsp dried leaf oregano
3/4 tsp ground cumin
1/2 tsp ground nutmeg
1. Place all ingredients in a jar and store in a cool dark place. Shake jar well before each use.
2. Over low heat, melt about 3 tablespoon of butter in a nonstick skillet (enough butter to cover fish and the bottom of the pan).
3. As soon as the butter is melted, place the fish in the pan, flipping it over to cover both sides with butter.Then generously coat the fish with the seasoning, flip over again and coat the other side with seasoning.
4. Now turn up the heat to medium-high and cook on one side until blackened and somewhat crispy. Flip over and cookthe other side. Add a little more butter whenever necessary.
Papa John's Pizza Seasoning
Might want to cut down on the salt.

1 tablespoon dried oregano
1 tablespoon dried thyme

Crab Boil Seasoning
Or, as we always called it, just "Zatarain's" (pronounced ZAT-uh-rans), after the most popular local brand of crab boil. It's a packet of spices that you just throw into the water in which you boil your seafood, and makes it spicy-yummy-wonderful. Just make sure you don't get it near your face and inhale, or you'll be sneezing uncontrollably for several minutes!
It's now widely available in the United States, but not elsewhere in the world. If you live in an area where it's not available, make your own, and have Louisiana-style boiled shrimp, crabs or crawfish anytime. Works well with any kind of shellfish (I'd love to try boiling langoustines in this elixir sometime!).
4 Tbs yellow mustard seeds
3 Tbs coriander seeds
2 Tbs whole allspice
2 Tbs dill seeds
1 tsp whole cloves
1 Tbs crushed red pepper
8 bay leaves
Salt and cayenne pepper (or liquid hot sauce) to taste
1. Combine all dry ingredients thoroughly. Place in a square of muslin or cheesecloth and tie securely with string, like a large sachet d'épices. Add salt and cayenne or hot sauce to the water to taste, then bring to a boil.
2. When water for seafood is boiling, add the bag and boil for several minutes, until the boiling liquid is tinted and seasoned, then add vegetables and/or shellfish and cook until done, depending on what you're using.
Yield: Enough crab boil seasoning for 5 pounds of seafood
Enola's Secret Seasoning
4 Tbs salt
5 Tbs plus 1 teaspoon granulated garlic
2 tsp ground black pepper
2 Tbs granulated onion
2 tsp ground red pepper
3 Tbs paprika
1 tsp ground white pepper
2 Tbs dried oregano leaves
2 Tbs dried thyme leaves
1. In a small bowl, combine all ingredients and mix well. Store in zip-lock bags or jars.
Poultry Seasoning
2 Tbs sage
1 Tbs thyme
1 Tbs marjoram
1 Tbs savory
1/2 tsp ground black pepper
1/8 tsp cloves
1. Mix all together.
Yield: 5 Tbsp
