Cooking a Ribeye Steak inside

Was wondering if anybody has pan fried the steak in a pan then brolied it in the oven?

Yep. But we eat them rare, so they never get to the oven.

Pan fry and then broil? I've heard of searing in a cast iron and then finishing in the oven, but not under the broiler. I have cooked steaks under the broiler the entire way. You have to watch for flare ups though.

May just cut it up then pan fry it

Cut up a ribeye? What are you trying to do? A philly type sandwich or fajitas?

No I will just pan fry the whole steak. Will keep the bone in there. Like it Med Rare

I usually just do mine over high heat (in a cast iron because it can take it) for 4 minutes a side and then let it rest in some foil for 10 minutes. If you like medium rare I think 3 minutes a side should do it.

I did some NY strips inside. 60-90 sec per side in cast skillet then 7 min in the oven at 450

A thing I like to do while the steak is resting is use a little bit of water and cream (just enough to get the pan drippings off the bottom of the pan) and use that to make a sauce for whatever side I'm having. Lately it's been grilled asparagus.

I did this Friday night. Got a cut that was about 1.5 inches thick. About 20 oz.
I got some butter, minced garlic, and a little red wine and made a marinade.
Took the steak out of the fridge, put my marinade on it, salt and pepper, let it sit for about 45 min. Cooked about 2 min on each side on high.
Transferred it to the oven for about 6 minutes. Let it rest for about 5 minutes. It was perfectly cooked to my taste

Alton Brown method is fool proof & produces the BEST steaks.
Take a 1.5-2" steak, season with a little oil & lots of cracked black pepper & salt. Heat oven up to 500 degrees-placing your black skillet in the oven to heat up-take skillet out of 500 degree oven & place on a burner on high, sear steak on each side for 30 seconds, then place steak in oven. After 3 minutes, flip steak & cook an additional 3 minutes. Take steak out, plate, & lossely cover with foil for an additional 5-8 minutes. This will produce a PERFECT med rare, add a minute or two on each side in the oven to cook to med.

I've used that method and like it a lot. It always takes longer than 3 minutes per side though. My oven temp may not be accurate.
