I may get flamed for mentioning this in an LA food board, but Island Creek oysters are some of the best I've ever had. Very plump and deliciously salty.

Also a tribute to those in MA.

Has anyone else tried these? Opinions?

I enjoy those also like the Kumamotos from the west coast, small and sweet, a different taste than the normal salty oysters

British Columbia is super dialed in on their oysters. Clean, less salty, very consistent flavor.

I sampled a few different styles there this winter and thoroughly enjoyed them up there. So much more flavors going on compared to our gulf oysters.

At old Ebitt grill in DC they had at least six different varieties of oyster. But many think we have the best.
