So, how much is there left of book 3? Can they make a whole season out of it or will they have to dip into book 4?

We finished about 2/3 of book 3. The thing is that Season 3 was all about getting to the Red Wedding. It's what the entire season was building up to in every storyline (save Dany and Jon's). Season 4 won't have a single catalyzing event to that degree, since it was pretty much Westeros' 9/11.
I'm honestly more excited for Season 4 than I was for 3. The juicier stuff is really in the second half of the book, and I couldn't put it down after the events of the Red Wedding.
That said, I'd imagine they'll have to start Books 4 and 5 next season as well. Just the beginning of them, but it seems pretty necessary.

couldn't agree more
Also the Greyjoy storylines are already in book 4 while others in the House are still in 3, if that make sense. I also believe that there will be major deviations from the books.

Most of the character POV's this season will be from the remainder of ASoS. However, a few characters will start material from ADWD, and some other characters will have some of the AFFC storylines begin. Then, season 5 will be the remainder of AFFC and ADWD. Season 6 is when TWoW POV's will start.
