Going again this weekend. I usually go with the outside skirt "Orestes' snack." I try to avoid the standard cuts there, or should I say somewhat standard as even the filet comes bone in.
Also can't wait for the provoleta, sausage plate and a bottle of Malbec

We just got the tasting menu, I can't remember if any one meat stood out. If they put bread on your table, don't eat it because you are going to be full before the second course even gets there.

The Hanger served rare is divine. I wait on the provoleta until the steaks come out.

Went Friday and it was awesome as usual. Got a few Pisco sours, bottle of Malbec and provoleta. For steak, I went with the hangar, rare. Ate half as-is, no salt necessary, and the other half drenched in the standard chimichurri sauce. Thought about saving some provoleta to put on a bite of steak, but it was all gone by then.

Sweetbreads kind of make me drool like a Pavlovian dog. Put a bit of demi-glaze with boursin cheese in it I will do any damned thing asked of by anyone.

I had the skirt with skin. Absolutely divine. Son had a rare hanger. We ordered a gaucho plate for app.... Sweetbreads were awesome as usual.

With four or more people, the tasting menu is the way to go. Everyone can order their own cut and share a ton of courses.
