93/7 here.

I know some will slam it, but I don't like a lot of fat.

I rarely buy ground beef. My processor makes my ground deer around 85/15, although some batches were more like 80/20. Very little fat for me too, but I like to make hamburgers from it, so I need enough for the burger to bind.

93/7 would not make a patty, I wouldn't think. I may be wrong though.

93/7 makes a dry arse hamburger. If I have that ratio, I melt some butter, mix it in the ground meat and refrigerate. It will congeal like beef fat.

You don't like any fat. I roll with 80/20.

I don't have a "go-to," I just use 80/20 without even thinking about it

Ground sirloin is about 90/10 and my go too for most things non-burger. If I'm firing up the coals I want ground chuck.

There are few things better than a good burger at home.
