Eels - Novocaine for the Soul
Cornershop - Brimful of Asha
Spacehog - In the Meantime
Nada Surf - Popular
Sunny Day Real Estate - In Circles
Goldfinger- Here in Your Bedroom
Screaming Trees - Nearly Lost You

I'm sure there are dozens more. Also, and I know they are not "rock" and may have had another hit or two, but Go West - King of Wishful Thinking always jumps out to me as "90s one hit wonder."

OK... Here's some good ones:

Tal Bachman - She's So High

Eagle-Eye Cherry - Save Tonight

Sister Hazel - All For You

ETA:

I thought about "Macarena" when I posted Haddaway... but couldn't bring myself to do it.

That and the "I would walk 500 miles" Proclaimers song.

I feel your pain, Chops...

I could go on forever about Concrete Blonde and Heather Nova who are also "one hit wonders" with multiple platinum albums.
