Ronald Curry was the best 2-sport prospect coming out of high school. Joe Mauer is the one guy who I think would have been a great collegiate player and pro in whichever sport he chose to focus on.

Booty was the 8th player taken in the MLB draft while he threw for 11,700 yards and 126 touchdowns, becoming the first high school player in history to throw for more than 10,000 yards (despite missing the last four games of his senior year because of a broken hand). Booty was named the USA Today Offensive Player of the Year and was named the National High School Player of the Year by at least six associations, including Parade and the Football News. #1 rated QB in Louisiana the same year Peyton was a senior.
But I if I had to choose it would Mauer, since he went #1.

Mr. Football & Mr. Basketball in Florida.
Only athlete to ever accomplish that. He also won the state championship in baseball. The guy threw for 42 TDs his senior year.....there aren't many more accomplished high school athletes who possess his skill/athleticism.
