Black Angus brisket - Pricing?

The brisket is $2.49/lb @ Ralph's in BR.
I hadn't priced brisket in a while, and couldn't believe when I saw it @ $3.99/lb around Nashville earlier this year, so I priced it at Winn Dixie last week in BR and it was $4.39/lb.
It seems like it was common to see brisket in the $1.50-$2.50/lb range a few years ago. Am I missing something or just finally caught my eye at a high price point?
They also have Black Angus chuck roasts for $2.99/lb.
Picked up some to try out in the new meat grinder and some just for brisket.

Couple of things driving this price increase.
1) Price of beef going up due to factors such as drought, fuel costs, etc...
2) Brisket has become one of the most popular cuts used by boutique burger shops which have opened across the country in recent years. As such, it has shot up in price. Supply and demand and all that other econ jargon.

Brisket @ > $4.50/lb puts it out of my thoughts for big meal cooking.
I believe I saw grass fed at Whole Foods for ~$7.00/lb.

For a whole, packer trimmed brisket, I mix two cups of brown sugar, 2 T of Tony's , 1 T of dry mustard, and 1/2 T of garlic powder, rub all over the brisket and smoke it.
As for purchasing, the discount grocers usually sell a bit cheaper, and I'd rather pull one of my own teeth than pay a premium price for an "Angus" brisket.

I get my briskets at SAMS....... ~2.50/lb. IIRC.
also got boston buts, shoulder, ribs, loins, rib roasts........

eta and if you are smoking it..choice/prime/etc doesnt matter. that thing is going to be fall apart tender anyway so with brisket its all about getting it cheap.
and yes..2-3 years ago i was routinely finding it for $1.29/lb for whole packers.

exactly! walmarts price on brisket was 1.29/lb and pork butt was 1.39/lb
at those prices i could afford to screw up briskets all day long.
now the price has like doubled.
oh and NEVER go to winn dixie or kroger or brookshires..you'll pay like $6/lb there.

You don't pay attention to the things that matter in terms of your wallet on the news. The prices on beef are way beyond the point of four years ago. In fact all of your food is way pricier and there are many factors to the increase..

Hard to justify buying brisket when it's so much more expensive than pork butt.

Hey. When you do your ground brisket for burgers, how much do you trim? Do you just grind the whole fat cap as well? That's what I've been doing.

Couldn't be further from the truth. Don't listen to a word this gut says after this ignorant statement.
That's like saying you can get any rib-eye, doesn't matter the quality, once it comes off the grill...
The better you start, the better you finish.
Most of the Competition guys have gone to $100+ Wagu Briskets while competing. Tramonte's has a great brisket but it is expensive.

If you watch the Albertson's sale paper, they run a special on them about twice per year for a long weekend (Th-Sun), from $0.99 to $1.50. It's usually with a $25 purchase or something like that, but I live by one and usually make a trip a day and stock up.

Yeah trim that fatcap pretty well; the brisket fat on the cap while awesome tends to be "chalkier" when ground.
Plus, you are getting a lot of intramuscular fat from the brisket, and a lot of fat from the ground chuck. If I had time Id render the brisket fat and fry the fries in it.

I believe Cad was saying that even a select grade brisket has ample intramuscular fat to produce a tender result, and he's right. No way in hell am I going to pay a Wagu price for brisket. I'm sure it's a damn good brisket, but I think it's overkill for what I do with this piece of meat.
