Oh, and by equipment by brewing progression went as follows.
Bought this kit.

And bought a 5 gallon aluminum pot for my brewpot.
Around batch #7 or 8 i upgraded my pot to a 9.5 gallon brewpot with ball valve and brewmometer. I started doing full boil extract brews.
Then brews 9 - 11 i have been going all-grain, with 2 10 gallon igloo water coolers converted to mash tun and liquor tun.
I do like, however, that they now have small 1 gallon equipment setups. Makes for some good experimenting, if you'd like.

I Don't do cultures, but i have found that starters are absolutely indispensable in brewing now. I've been doing them for about 5 or 6 batches now, and have never had any doubt on fermentation.

Plastic is easier to handle. But I've just invested in my 2nd glass 6 gallon carboy as I am trying to reduce any chance of exposure to chemicals that are suspected of causing cancer or disrupting hormones.

yea i havent in 3 years. I went to chicago last weekend and talked brewing with a bunch of people there and sparked the interest back up.

That's how I got back into brewing. I lost interest after a string of sub-par batches When I switched to all-grain. Didn't brew for a year until somebody asked me to teach them. Now, a year later I'm buying a welder so I can build a single tier stand.

yes, kits are fine for longer storage. Shouldn't have any issues with any of the kits from the main few homebrew supply places. Keep them in the pantry. Keep the yeast and the hops in the fridge.

Quick update:
Just ordered my first ale kit. The starter kit should arrive tomorrow. And just started reading Palmer's book.

Palmer's book mentions that the fermentation bucket MUST be kept below 75 degrees at all times. I live in FL and can see this being an issue.
Any ideas/tips?

I brewed a batch last night. First time in a few years and i used a 2 year old kit....lol i hop eit is good. there was only 3 small growths on the top of the extract. I just scooped them off. Im sure the boiling took care of anything else in it.
Are you using a bucket or carboy?
When i brewed in college, in the middle of the summer, in BR, a trick i learned was to place my carboy in a cube cooler. i had 4 bottles of water frozen and would put 2 in the cooler at a time. It kept the carboy around 70+. Just switched out the 2 bottles with the 2 in the freezer every 2 or 4 days. this was inside by the way.
yea a swamp cooler. its wasnt called that back then

I used the swamp cooler method like mentioned above. I bought an igloo cube cooler and cut a hole in the lid. Then filled it up about 1/3 way up with water, and added a few frozen water bottles. Once you get your temp set (ferment around 68 or so) just swap out a frozen bottle or 2 every day. You should only really need 3 bottles.
