i think silversun pickups would be good, they have good acoustic stuff.

I always hoped Metallica would do it back in the day. Probably wouldn't be good now though.

Most realistic option that comes to mind - deftones.

Big enough name, experience with stripping down songs etc....

Not saying itd be my favorite but I think it fits the show, and audience as well as anything mentioned so far

Radiohead unplugged would be interesting, they'd show up with an 18 wheeler full of instruments from all over the place.

Clutch has some great acoustic renditions.

Almost any indie-folk band would be fine on unplugged, as would plenty of the texas country/americana genre.
