What is a good substitute for cream of mushroom soup in a recipe?

When I have leftover rice I will admit that I put some broccoli, cream of mushroom and a good cheddar with it and bake at 350. My kids all really like this. The only way I can think to substitute the cream of shroom would be to make a white sauce and add the cheese like you do with macaroni and cheese but that is way more work. Are there any other ideas or do I either have to make a sauce or risk F&D board ridicule?
I also sometimes mix spaghetti noodles with leftover chicken, rotel, cream of mushroom and velveeta and feed it to the kids.

I'd make a bechamel and use that, depending on what you're trying to make.

I like that idea. It gives you more control over the salt content which is the biggest downside to using canned soup.
