What's your pancake recipe?

I usually end up doing the 2:2:1 with Bisquick, Egg and milk. Looking to change it up a bit.

Go invest your cash in a box of Pioneer baking mix along with a box of buck wheat. Add a bit of the buckwheat to the first component. Add fruit or nuts as desired, personally bananas and pecans, then butter and cane syrup.

Replace milk with Sprite or 7UP. Do it.

I would only do that if I was using all purpose flour. The mixes have leavening in them that can make for a huge assed pancake

2 cups AP flour
3/4 cup buttermilk
1 egg beaten
1 TBS sugar
1 tsp vanilla extract
1 tsp salt
1 egg white beaten to soft peaks

Sift AP, sugar and salt into a bowl
Add buttermilk and vanilla to the beaten egg combine.

Add to dry ingredients and stir leaving some lumps. Let rest while beating the egg white.

Fold egg white into batter.

Cook on a griddle. Serve with melted butter and your favorite syrup.

I always add sour cream to any recipe. Makes it much better.

i use bisquick or arrowhead mills if i wanna go whole wheat. an egg white, lil milk and a drop of vanilla.

We use it with Bisquick. It does make them a bit fluffier, but nothing crazy.

This sounds awesome. Would you please add it to the recipe thread so I can find it later.

I generally use the whole wheat mixes but I always add a little mascarpone just to give it some more richness. Also, some lemon zest is always a good change of pace.
