jk...I respect you choice, but the only vegan recipes I know are green salad withouth the bacon bits and boiled eggs. Good luck.

I have several vege recipes but I am not vegan and so most have some non-vegan stuff in them i.e. cheese.
Stuffed Bell peppers
Felafel Wraps
New Mexico Stacked enchiladas
Green Chili vege stew...can be eaten by itself but I usually put it over a bean/ vege burrito
Pasta primevera is pretty simple.
A lot of stuff can be made vege by using the fake ground beef. Quorn makes the best.

I like to do mexican quinoa.
Saute onions with some butter, garlic, cumin and salt and pepper until onions are translucent.
Add vegetable stock and quinoa.
When it's nearing competion add drained Rotel tomatoes, black beans and frozen corn. Finish cooking quinoa until done and corn is heated through.
Add chopped cilantro and more salt and pepper to taste.

Wife and I did it about a year ago in support of a family member doing it for health reasons. "The kind diet" is a good cook book and veganyumyum is a good website. Get creative or it gets boring fast. But it's good for you (regardless of what some people will argue). I lost about 25 lbs. in a few weeks but you need to make sure you get your protein from either supplements or natural sources. I also had cheat days where I'd get a bacon burger to stay sane. Good luck!
