Fresh sweet corn

Have a couple of ears, how should I prepare?

Having chops, sausage, and zucchini with purple onions

Boiled for about a minute if that long. If its really fresh no need for anything else

use a knife and cut it off the cob, making sure to get the "milk" meaning scrape the cob for every little bit of it at the same time. Take a half an onion, and sautee it til clear, then the corn bits til done(@15 minutes), S&P.

Do cuts plan and add some chopped up jalepenos and maybe a shot of heavy cream.

For a side, it's real hard to beat fresh corn roasted in the husks when it's in season.

Grilled!

Leave the husk and silk on the corn
Soak for half an hour in water
Grill for 15-20 minutes rotating ever 5 mins or so


You Southerners don't know what to do with corn.

Maque Choux

12 ears of sweet corn
1 bell pepper
1 onion
2 tomatoes
1 stick of butter
Salt & black pepper to taste
cayenne pepper to taste

Chop the onions and bellpepper finely. Cut corn off the cob keeping the juice. The trick is to cut about half way through the kernels, then go back and scrape the cobs with the back of your knife to get all of the milk from the cobs saving the milk from the cob.
Saute onion, bellpepper, and tomato in butter until onions look almost clear. Add corn and cook for about 10 minutes. Add black pepper and cayenne pepper. Cook until tender (should be about 15-20 minutes). Adding a little bit of milk can help make it tender

OK, you have impressed me. Most people think you have to cook it for 15 minutes or so. Drives me crazy. All you really do is blanch it so the bugs fall off.

Yea, you don't even have to cook it really. I've eaten many a ear of sweet corn straight out the husk.

Overcooking fresh corn should be a capital offense.
