Sour Oranges - What to do w/ them?

There is what I believe is a "Sour Orange" tree in front my house that is COVERED in fruit right now (look like limes right now). Last year I made "margaritas" with them b/c they are WAY too tart to just eat or drink the juice. Any suggestions on what I should do with these things?

They are not meyer lemons but some other variety. The fruit is very rough skinned and somewhere between the size of a baseball and a softball in size. The tree they are growing on touches the window on the 2nd floor. The thorns are about 1" long.

use them to make fish tacos.

squeese the juice in a container. take 1 inch cubes of tuna steaks and place them in the juice for three days. after three days, the tuna is ready to serve on the taco.

add shredded cabbage (with vinegar)

Marinade is the only thing I've heard them being used for.

Sour Orange and pork are pretty fantastic.

In Spicer's cookbook there is a roasted pork butt recipe with jalapeno's and orange juice and garlic, and other delicious things. I'd sub out the orange juice and use sour orange. Also, use juice in salad dressings.

You could also skin the oranges and soak them in vodka for 45 days or so. Then strain it. Chill it. And use it to stave off the heat of August.

In fact the last thing is what I'd do. If you have extras let me know.

many Cuban pork dishes call for sour orange juice. I found many when I googled last time I was looking to do a pork butt.

I will have TONS

I tried doing this the other day w/ Lemons. It came out nasty bitter.

BO, Madam,

Thanks for the pork suggestion. I guess I can use them instead of lemon in any marinade and it will be a tad sweeter.

You likely had too much of the white pith on the rinds. How long did you soak?

Cut them up and put down garbage disposal every now and then. The citrus and peelings will kill some bacteria and reduce smell of anything else lingering in there....

Yeah only thing I can think of is the white pith was on the rind. After that long, things can get very bitter.

Although Charbay flavored vodkas (only flavored vodkas worth a damn) toss whole chunks of grapefruit into a vodka soak, pith and all. And that stuff is pretty fantastic.

Correction: They soak the fruits to release the extracts and then blend them with vodka. Charbay is a distillery/winery in California.

For the record, my favorite flavored vodka is gin.

If it was winter the sour oranges would be a fine addition to a mulled wine. What about putting them in Sangria? or some kind of sorbet or ice cream that you can add other ingredients to cut the bitterness/sourness?

Before reading the responses, this is the first thing that came to mind because you can not only take advantage of the acidity in the juice, but you can utilize the zest as well.

Those oranges are probably pleading to be added to some jerk chicken marinade.

Do you still have these oranges at your house? I was looking for sour/Seville oranges for marmalade. Thanks! Can't find them anywhere in the city.

No. Isaac messed up the tree and my friend/landlord hacked the tree down to its base.
