im probably one of the nicest guys when it comes to dealing with waiter/waitresses. sometimes too nice.

I don't disagree with any of those BUT ... turnabout is fair play.
You say you open at 11, be damn sure to be up and running full bore.
My reservation is at 7:30, then you need to seat me at 7:30 p.m.
You better serve every item that is on the menu.
Actually, I don't expect every item on the menu to be there every time. I don't expect to be seated exactly at 7:30. And, when I picked up lunch at Munjuni's today right at opening, they didn't have mint tea ready. I survived.
I don't want to get served at 9:55 if the place closes at 10. The norm, unfortunately, is that things start closing down at 9 when the place closes at 10.

The problem is people with earlier reservations showing up late and screwing it up for everyone.

I'm a waiter's perfect customer. I never complain. Always leave a nice tip. My favorite story. Years ago I was at a Steak place with the wife. We ordered a bottle of red wine.
The waiter was on his first day and did not know how to open a cork. After pulling instead of using leverage he turned his back to us, put the bottle between his legs and started yanking at the cork really hard. He looked like he was masturbating. It was hysterical.
A manager came up and showed him how to use the corkscrew.

Have to disagree. if I pay $40 for a mid rare filet, I want it cooked right. You should have no reservations about returning food in a place that is supposed to excel at cooking it.
If you order a steak from Chilis, or your chicken fingers aren't steaming hot, I completely agree with you.
I waited/served for a long time, and if the food wasn't cooked right, I had no problem taking it back. The kitchen may be pissy, but get it right the first time.
