Why not? It gets tender and stringy enough where you could mash some out to use as a topping on your celery leaf stuffed burger if you really wanted to.

Tavolatim's recipe is pretty good. I made it once with a few changes (no pork in chili for me) and really enjoyed it.

Relative to cubed meat in chili, I like it. it's pretty easy to cook something only until it's tender and not have it become a stringy mess... Cubed eye of the round is really good for chili and it takes a lot to overcook it. I also braise eye of the round sometimes and "chip" it instead of using only ground meat. I then add it to my chili once it's cooked and cool. I refrigerate overnight and serve the next day after the flavors get to mingle. To each their own though...

Did you make any other changes, GM?

I don't usually use pork in chili, but I'm going to try it with beef and see what I think.

I'm no expert on chili. I make it the way I like it, sort of like all the fools who put tomatoes in their gumbo. They're not gumbo experts, either.

Zach, you posted your idea a few hours ago. I have yet to try it on account of chili making is frowned upon around here.

Maybe I will though, except I'll run it through a meat grinder first.

Nice photo, Zach. I have to have some sort of cheese in my chili and a dollop of sour cream on top. I'm sorry you have to eat your chili without cheese. I probably wouldn't eat it at all if I couldn't have cheese.
