Getting Steaks cut at the store

When you guys get steaks cut at the market, how thick do you get them to cut your steak?

does anyone ever by the whole loin and get filet made out of them? then grind it the rest up as hamburger.... someone told me you can do that at calandros and save serious money... if you need that mant filets

I get my Ribeye's cut to 1". I find a 1 1/2" steak too large a portion of beef. And I like to grill mine on a very hot infra red grill, and if I cut the steaks larger than 1", the steaks tend to char a bit to get the middle just right.

inch and a quarter......dad goes 1.5 minimum

I like my ribeyes 1 1/2 inches. Wife likes her steak about an inch. Why grind up the rest of tenderloin? Do you think they grind it or something else?

I do it all the time. But I cut them myself and more oftern than not I cook it whole. Buy one, cut it in half and cook two roasts.
I like an inch and a half on most and two inch filet. Or a little thicker if that is what it takes to keep the bone in.
