Me as well. I do start planning though. Planning to look in the freezer and use whatever I have.
After the holidays, normally January, my wife and I have a two week "no groceries" period in which we eat everything in the freezer and pantry to use it up. We could really go a month with probably only buying milk and bread.

this is a great idea; i was just looking through the freezer this past weekend, thinking that it is time to use up many of the meats/bags of stocks that are in there. too many times i go to the grocery and buy stuff for a meal/dish and forget i've probably got some of necessary ingredients in the freezer.

I usually use andouille of various types, but the I made gumbo twice in the past several weeks, using a smoked sausage from a meat market in Marksville across from the casino. Someone brought it to me, so I haven't actually been to the market, but the sausage was very tasty. I was pleased with the flavor it brought to the gumbo. I have a nice supply in the freezer for future use and I've already been through 10 pounds of it.
Nice idea about eating from the freezer and pantry. I try to do that every once in a while, but when it comes to cleaning out the pantry and the freezers, it pains me when I see what I have to throw out.
I had to clear a lot out to get the gumbo frozen, but most of that will be given away as Christmas gifts to neighbors and co-workers, thankfully. Then, I can make again for me!

All I use is Veron's smoked sausage and andouille...it is worth the extra cost.

To those who don't know it, Veron's smoked sausage is not the same smoked sausage that Veron's Supermarket in Lutcher produces and sells at the store. Try both and decide for yourself- the Lutcher store version comes in mild and hot, and it is far better in my opinion.
While you're at the store in Lutcher, pick up a few of the huge and delicious stuffed pork chops.
