I don't think that Diner gets enough props.

American History X
Cold Mountain (Does that make me ghey?)
I would say The Prestige, but I think it has gotten its fare share of props.

Very Bad Things
Quiz Show
The Game
Papillon
Swingers
I could sit here all day and come up with movies, but I'll stop there. These threads are always good for adding a few movies to the queue. I try to list movies that didn't win any awards or only got 1 or 2 nominations.
Two movies I left off my list that got a lot of Oscar nominations but didn't win anything were In the Name of the Father and The Insider. Both are amazingly good films that a lot of people have either never heard of, or completely forgotv about, which is a shame.

I'll add another one- Flags of our Fathers
Great book and a great movie. I was surprised it didn't get more love than it did. I thought Adam Beach was robbed for not getting at least a nom for Best Supporting Actor for his role of Ira Hayes.

I think Scent of a Woman is pretty damn underrated. I know Pacino won the Oscar for it and all, but it seems that a lot of people don't really know/remember the movie. I read somewhere that the director signed a contract that bans Scent of a Woman from being played on television and on flights.

Two come to mind:
"Sleepers"
"The Prophecy"

First time I saw Scent of Woman it was playing on AMC, so I doubt that's true.
I don't know if it's underrated, but it is one hell of a movie. No doubt about it, Pacino 100% deserved that Oscar. Another good thing about this film: Philip Seymour Hoffman got his first major role in Scent of a Woman.

Breakdown...with Kurt Russell. Don't even remember it at the movies. Good suspense.

I agree with a ton that have been posted: breakdown, stand by me, sling blade, dark city, last of the mohicans, gilbert grape, little children, frailty, outside providence, in bruges, the game
ill add: dark blue (kurt russell), after hours, buffalo 66, one false move (first movie billy bob co-wrote, bill paxton is great in this), grindhouse, the pledge (into the wild as well, but i dont know if its really underrated), manic, mysterious skin
