Fried, pan-seared, or blackened Mississippi- raised catfish and topped off with some crawfish sauce.

With a side of cheese grits.

I've not been to Starkville, but have always wanted to make the trip. Never bought into the narrative that it was some podunk town. Small college towns are great. And State fans are always a good time when they come to Lexington in my experiences with them.

Seriously, there are folks that think Red China catfish is good and some that like Yankee catfish from O HI O or Michigan, but they just show how bad their catfish knowledge is.
